- 18 grams (3 tsp) salt
- 3.5 grams (1 tsp) active dry yeast, or 2.6 grams (~ 3/4 tsp) instant dried yeast
- 613 grams (approx. 4 7/8 cups) “00” flour, plus extra for dusting
Tip: Prepare your pizza dough ahead of time.
To make the classic Ooni pizza dough, start by weighing out the ingredients using the Ooni Dual Platform Digital Scales. Mix the water, salt, and yeast in a large mixing bowl, and gradually add in the flour to form a shaggy dough.
Knead the dough for 10-15 minutes by hand or using a stand mixer with a dough hook, then let it rise for 1-2 hours until it doubles in size. Next, divide the dough into 4 equal pieces, shape them into balls, and let them rest for 30 minutes.
Preheat the Ooni Pizza Oven to 932°F (500°C) using the Ooni Infrared Thermometer, then stretch each dough ball into a 12-inch (30cm) circle on a lightly floured surface before transferring it onto the Ooni Pizza Peel and top with sauce and toppings before sliding it into the hot oven.
Ooni Gluten-Free Pizza Dough
You're avoiding gluten, no problem.
Here's a simple way to create a gluten-free pizza dough. Change out the recipe by adding simple gluten-free ingredients as sauces and/or toppings.
The ingredients you need include a gluten-free flour blend (we like the Bob's Red Mill Gluten Free Pizza Crust Mix), yeast, water, olive oil, and salt. First, mix the flour, yeast, and salt in a large mixing bowl. Gradually add in the water and olive oil and stir until a dough forms. Knead the dough for about 5-7 minutes until it becomes smooth and elastic. Then, let it rest for about 30 minutes.
After the dough has rested, you can shape it into a pizza base using a lightly floured surface. Transfer the dough onto an Ooni Pizza Peel, dusted with gluten free cornmeal, and add your desired toppings. Preheat your Ooni Pizza Oven to 932°F (500°C) using the Ooni Infrared Thermometer to check the temperature. Slide the pizza onto the pizza stone and bake for around 60-90 seconds, or until the crust is golden brown and the cheese is melted.
Ooni Pizza Tomato Sauce
What's the ideal pizza sauce? Everyone has their say. To each his own, but we love the good old tomato sauce!
You'll need a saucepan, 2 tablespoons of extra-virgin olive oil (this is our fav, it's a best seller on Amazon!), 2 garlic cloves, 800g of canned whole plum tomatoes, 2 teaspoons of sugar, 1 teaspoon of salt, fresh basil leaves, and ground black pepper.
Making the Onni Classic Pizza Sauce is easy. To begin, heat the extra-virgin olive oil in a saucepan over medium heat, add the garlic, and cook until fragrant. Then crush the canned whole plum tomatoes and add them to the saucepan, followed by the heaped teaspoons of sugar and the teaspoon of salt. Bring the sauce to a simmer and let it cook for 20-30 minutes until it thickens, stirring occasionally.
Add the roughly chopped basil leaves and a pinch of freshly ground black pepper to the saucepan, and stir to combine. You can blend the sauce for a smoother texture or use as it as a topping for your pizza, or store it in an airtight container in the refrigerator for up to a week.

Here are some of the trending Ooni pizza recipes you could try making at home with your gas-powered pizza oven. Using a wood/charcoal/pellet-powered ooni oven will also deliver outstanding results.
Take note that we assume that you have already created your dough or have bought a premade one.
Ooni Margherita Pizza
This is a simple yet delicious recipe. No pizza toppings are needed aside from cheese.
- 9 ounces (250 grams) or 12 ounces (330 grams) Classic Pizza Dough
- Flour, for dusting
- 3 ounces (80 grams) crushed tomatoes
- 3 ½ ounces (100 grams) fresh mozzarella, torn into pieces
- teaspoon (5 grams) of extra-virgin olive oil
- Bunch of basil
To make Ooni's version of the classic margarita pizza, you'll first transfer the dough to the Ooni Pizza Peel and spread the classic pizza sauce evenly over the dough, leaving a small gap at the edges.
Add the toppings by scattering fresh mozzarella cheese evenly over the sauce, followed by a handful of fresh basil leaves. Transfer the pizza onto the Ooni Pizza Oven using the Ooni Pizza Peel and bake for 60-90 seconds, turning the pizza frequently with the Ooni Pizza Peel until the crust is crispy and the cheese is melted and bubbly.
Once cooked, remove the pizza from the oven using a pizza peel and let it cool for a few minutes. Finally, use a pizza cutter to slice the pizza into desired portions and enjoy hot.
Ooni Pepperoni Pizza

- 250/330g (8.8/11.6oz) classic pizza dough ball
- 4 tbsp Classic Pizza Sauce
- 70g (2.5oz) mozzarella cheese, torn into chunks
- 8 slices of pepperoni sausage
- Pinch of freshly ground black pepper

For the barbecue sauce:

- 1 medium yellow onion, diced
- 2 cloves garlic
- ¾ cup (200 grams) ketchup
- ¼ cup (60 grams) brown sugar
- ½ cup (110 grams) apple cider vinegar
- ⅛ cup (30 grams) yellow mustard
- 1 tablespoon (9 grams) chili powder
- 1 teaspoon (3 grams) smoked paprika

You're going to need a food processor for this vegan pizza. And if you want to know how to make the Ooni's version of hummus then you should take a look at their recipe but you could also buy hummus.
This pizza is rich in flavor and is vegan.
For the hummus:
· 2 roasted garlic bulbs
· One 15-ounce can of organic chickpeas
· 1 teaspoon of tahini paste
· 0.85 fluid ounces (25 milliliters) of extra virgin olive oil
· 1 medium lemon
· Pinch of sea salt
For the pizza:
· Flour, for dusting (we suggest a blend of flour and semolina)
· Four 9-ounce (250-gram) dough balls
· 14 ounces (400 grams) of Pomodori or San Marzano tomato sauce
· 10 to 12 whole black olives (whole, or if you prefer, 5 to 6 halved)
· 8 sprigs of fresh thyme
· Extra virgin olive oil
· Black pepper, to taste
· Salt, to taste
Roll out your pizza dough on a floured surface and transfer it onto a floured Ooni pizza peel.
Then spread tomato sauce over the pizza dough, leaving a border around the edges. Spread hummus evenly over the sauce.
You want then to add the sliced red onion and black olives to the pizza. Add cherry tomatoes to the pizza. Season with salt and pepper to taste.
